You’ll always find a pot of “Frogmore Stew” (locals call it a low country boil) cooking beside the chuckwagon! I’m going to share my GREAT great-aunt Theophile’s recipe with you, with modern updates for frozen corn.
5 pounds of shrimp
5 pounds of Andouille Sausage
5 pounds of new (or red) potatoes
5 pounds of corn
1 pound of Old Bay Crab Boil Seasoning
5 gallons of water
Bring your water to a boil. Add some spice. Taste it. Add more until you are satisfied it’s good, not too salty and not so hot…
Add your potatoes. Boil them for 30–45 minutes. I prefer whole if they’re small (Quarter to half-dollar size. If they are bigger than a golf ball you can cut them in halves or even quarter them, or just boil them longer.
When they are starting to get soft, add the sausage, cut up into 1″ pieces. We’re 10 minutes away from good eating.
If you cut fresh corn, go ahead and add it AFTER the sausage has cooked! If it’s frozen, WAIT!!!
In the 10 minutes of cooking the sausage (and fresh corn), chech the taste of the water. Add more spice, if necessary.
After the 10 minutes, add the shrimp. IMPORTANT!!! 2 MINUTES!!! CUT THE HEAT!
NOW is the time to add the frozen corn.
Let it set for 5 minutes. Then drain it, spread it out, and it is ready to eat! Serve it with melted butter and cocktail sauce.
